Left-Over

I made some leche flans this weekend and, unavoidably, I was left with two dozen eggs’ worth of egg whites. Since I wasn’t paying attention to the LaPiS theme for this week, I made an angel cake with some of the leftover egg whites but didn’t even think to take a picture of it! (Besides, the experimental cake was merely passable, nothing to brag about at all, haha!).

Anyway, despite the cake, I still had a few cups of egg whites left. So, I scrounged around in the ref and came up with this simple (and consciously created) LaPis entry of Bacon and Spinach Egg White Omelette.

omelette
All entirely made of left-overs: left-over spinach from my tinola, left-over bacon and parmesan cheese from my carbonara, and of course left-over egg whites.

Walang nasayang. My grandma would be proud! :)

Good idea, Mee! Will give this a try the next time I make leche flan. Thanks for the tip!
